Red Fife is a truly magnificent wheat. It is an heirloom variety brought back from near extinction in 1988 by Canadian Sharon Rempel. She literally started with a handful of seed given to her by an old farmer and was told, “Don’t let this wheat become extinct”. Today it is grown commercially mostly by a few organic farmers and is still very hard to find. We found a farmer in Cherry Valley, NY who grew it last year and feel very special to be able to malt it. Red Fife is know by artisinal bakers for it’s flavor. This is made using 2-Row organic malt drum roasted fresh to order. Color is approx 200L, lighter than most commercial chocolate malts.
